A Day in New Orleans…

March 5, 2009

I’m a couple of days late posting this! I wrote it the day we went but my computer went haywire and it took a couple of days to fix it….hmmm

We took our daughter in law to the airport in New Orleans. ON the way home we went out to eat at Bayou Country…Wonderful place! Good Po’ Boys and lots of typical “Southern” things there. while we were there someone asked for  a shrimp po’ boy…They said they didn’t have shrimp….The guy said, “what state are we in” ?? LOL Anyway….They said they’d pass and go get one somewhere else.

Aren’t these so cute??? But oh,  my poor feet! I’m so sore! I also woke up with a cough and sore throat, but that didn’t stop me from going….

Anyway….Let’s talk about po’ boys, gumbo, pralines, turtles, alligators, jazz, Louis Armstrong!, Lake Pontchartrain, Chalmette, Slidell, Picayune, chicory, roux, French Market, beignets, Tabasco, coffee mugs big enough to hold 3 cups of coffee, Mmmmm…

Shrimp Bisque

My recipe…I’m one of those cooks that doesn’t measure??? A dab of this and a little bit of that!

tony20chachere20shrimp20gumbo20120servingMade much the same way as Gumbo, just leave out the okra, and make a milk gravy or white sauce. Ingredients are shrimp, corn, onions, celery, green onions, drained diced canned tomatoes, canned whole kernel corn, salt, pepper, and garlic. Lightly brown onions, celery, and green onions. Make milk gravy, add well-drained tomatoes, thicken. Pour into pot with onions. Stir in corn, simmer a little while. Stir in cooked, peeled, de-veined shrimp. Simmer awhile longer until thick and creamy, like chowder. Serve over rice (opt)…with rolls and salad or with just saltine crackers is fine!

Be sure and click on the player, (as soon as I re-install it??) and listen to Louis Armstrong songs…These were playing in the the airport…They are very true to their culture there! (Couldn’t ever get it to display properly so I removed it…One of those little aggravating things about WordPress!)

Your shrimp bisque looks so delicious! I would love to try it. My husband’s very picky but your recipe sounds wonderful, like something he would like and he loves shrimp.
